This is my first attempt to make a meatless Red Beans and Rice. Honestly, I miss the flavoring with the salt that comes from sausage and pickled pork!
With a cup of tossed salad this makes a fast dinner or lunch; you can add chicken or salmon to the pasta for more protein.
Makes 4 servings as main meal and 6 as a side dish.

THe recipe called for red wine but I did not have, so I am using Sherry instead. Flour called for 1 tbsp but recipe maker would not let me change. I made homemade croutons with the bread in oven .
I used bow & arrow brand blue corn. I used the 8 inch cast iron pan.

THis is a very moist burger and full of flavor . You can substitute the tapenade for olives of any flavor and use any spices you like for a variety of different burgers. SOmetimes I dont even put the olive paste or corn in if I don't have it on hand. Enjoy.
This is a low carb soup which is filling and tasty, perfect for a hearty lunch. Supplement with a green salad or with salsa. Calories can be cut further by using low fat cheese and sour cream or scaling back the amount of cheese used. If you use fresh, homemade tomato paste it also cuts back on salt.
