Directions
Add 4 tablespoons of chicken broth to a large saucepan. Sauté garlic, onions and bell peppers for about 4 minutes.
Add the next 9 ingredients, cover and bring to a boil, reduce heat to a slow boil, and cook for 12 minutes.
Add the next 7 ingredients and cook for about 20 minutes. (I don’t use salt - Add salt if you must) (A good salt substitute is Mrs. dash seasonings).
Servings: about 12 - 14

Messina: I have a lot of favorites, but one is my three bean salad. I just love beans! I mix chickpeas, large red kidney beans and black beans with cherry tomatoes, cucumbers, red onions and fresh basil, then toss with balsamic vinegar and extra virgin olive oil. I can eat that meal every day!

This is Mom's original recipe but other adaptations can be easily made (such as turning this into Hawaiian hash or into a vegetarian chili).
You can definitely add more vegetables or beans to this if you wish, which will make this go even further. You can add oregano and basil (about 2 tbsp or to taste) if you wish, but I did not include this in the recipe. Sometimes I like to add jalapeños or hot sauce to my own serving.
Excellent for lunch! This meal keeps you full and highly energized (especially if you make it a complete meal by adding a side salad and possibly a very small whole wheat roll)!!! If you are serving this for others, you can put a very small amount of shredded mozzarella cheese on top to make it look really glamorous. Enjoy!
Boil rice seperate. Fry onion till golden brown. add Ginger tomato garlic, Potatoes, Ready mix Biryani spices, Beef stock cubes and Low fat yoghurt. After 5 minutes add 2 cups water and cook till potatoes are done. Don't over cook potatoes.
In a separate cooking pan, layer cooked potato and cover with rice.Repeat. On top place sliced lemon. Put lid on pan and let it cook on low heat for next 20 minutes.
After 20 min. open lid and carefully mix the rice 1 or 2 times. Take out in a dish and serve hot.
Quick stew I through together for lunch one day. I don't understand how the calorie count can possibly be so high, but I couldn't find anything wrong with the calculations, so there it is :shrug:
Just wanted to whip up a soup to use up some green veggies for lunch. None of these amounts are set in stone, nor are the ingredients, for that matter. I only used this as a calculator, but wanted to save it to add to my meal planner. That said, it really IS quite good! A bit high in calories, but I had it with fish, so it worked out ok for the meal.
