From Nutrition Diva: I used to think of this as a mock egg salad until I realized that I like it much better than regular egg salad! It's great on crackers or as a sandwich or wrap filling.
This is the tuna sandwich that the man had as a kid and still loves to this day. I'm not sure who the heck thought to put egg in tuna, but it's pretty good!
This is the salad that I made from the Rotisserie Chicken left overs. I put it on bread for a sandwich, but it would also be good on a bed of lettuce.
I put these toppings on the whole wheat thin crust pizza dough recipe by SP 'AZIAS_MOMMY'. This is really great and freezes well (topped ... or just freeze the rolled out dough). This makes a nice lunch for under 300 calories. I like to make some to keep in the freezer for days I can't cook from scratch.
Decent for diabetics, reasonable in carbohydrates, good level of fiber for the meal. I add a salad, myself. It packs well.
This salad has a lot of veggies. Other vegetables such as raw chopped or grated carrot can also be added to suit your palate.

This is a lower sodium, higher fiber , vegetarian version of a traditional favorite food. I find that one is enough for lunch if I have some fruit or gelatin with it.
