Something I whipped together for the week. I added the oil for moisture and to get in "healthy" oils.
It's a fresh twist on a simple tuna salad recipe. Feel free to experiment with other ingredients. Tastes great on the wheat tortilla.
This recipe is always a hit. I was limited in entering ingredients so please look at the ingredients in my list and notice they are a little different than the nutritional info. The actual ingredient list bring the fat grams down to 9 per serving. The original recipe came from a fitness magazine, but, I can't say which one because I just cut the recipe out and have been using it for a few years.
Once again, I found myself searching the cupboards for something...anything...to throw together for a late lunch.

This chicken salad recipe can be used on a sandwich, in a wrap or on a bed of lettuce. It is super yummy, healthy and creamy, using nonfat greek yogurt instead of mayonnaise!
Initially made out of a leftover snapper bake, this soup makes a fine substitution for clam chowder, but is delicious in it's own right.
