something I just cooked up out of desperation one night that turned out good. I had to put .66 of the package of the potatoes au gratin to make the calorie numbers come out right. You use the whole box of the aldi's brand chef's cupboard augratin potato mix in the recipe.
Lots of different beans make this an excellent chili. Can also be used with lettuce to make taco salad
This has been one of those recipes that's become a necessity in my life. It's filling, tasty & very versatile. You can modify it to what you happen to have or what you like. I've changed up the salsa added, tequila & no tequila, 'no added sodium' tomatoes, etc. Enjoy!
Ok, I just kinda threw this together based on a couple other recipes I found and combined them using the ingredients I had to hand.
You could easily cut the calories/serving down using less olive oil, reduced fat cheese on top and getting a lower calorie tortilla to use.
I topped my serving with 2 TBSP lite sour cream.

The ingredients vary when I make this- leave out the peppers and put in corn, add some shredded cheese and/or sour cream to the filling, coat the bottom of the baking dish with salsa... Once you have the basic ingredients it's very changeable to your taste.
