I took some help from the store here. It is important in our house to get as much nutrition from our meals as possible. Also to watch the sodium levels. To that end here is my modified black refried bean mixture.
This is a recipe from the back of an El Paso box. Not a goodie for the diet! I'd appreciate ideas on how to make this lower calorie.
This recipe was adapted from my favorite recipe for Mexican rice, but since I'm not eating white rice anymore, I figured why not attempt it with a healthier grain? I'm glad I did, because it turned out awesome!
*Just a note, the preparation does involve a food processor, but you can always use a blender.
*Also, if you have some kind of oven-proof saucepan, use that for the whole stove-top preparation to avoid pouring the hot mixture into an oven-safe dish. I need to get one for myself, pronto!
This is so delicious and tastes just like an enchilada. If you would like a little more creamy texture add light sour cream and cheese(calories not included).
You can assemble this casserole up to 8 hours before cooking. Refrigerate until ready to bake.
