So easy, I'm not a great cook... but I love these things! Add any veggies you like
Slow cook on the stove stop. Uses all fresh ingredients. Adding this mostly due to it being a family favorite and not many others call for making homemade verde sauce. I also adjust the heat by leaving the seeds and ribs of one half of one jalapeno. Can also add 2 anaheim or poblano chiles for more heat.
This is your basic chicken tortilla soup without the tortilla's factored into the bottom line calorie total. It is a pretty fast and filling lunch or dinner that you can throw together using an already cooked rotisserie chicken from the grocery store. Fee free to customize it any way you see fit.
Fast, filling and super easy to do. These burritos make a supper spring to life in a matter of minutes. Pair this with Spanish rice, beans, lettuce, chopped tomatoes, salsa, light sour cream and (if you can spare the calories) some homemade guacamole and you have a meal that even a Los Dos Amigos would be proud of! (I use smaller tortillas than what is in this recipe to cut down on calories. It doesn't ruin the taste and it is still filling!)

Creamy variation on traditional salsa chicken. If sodium is an issue for you, you can try substituting other seasonings to taste for the taco seasoning mix.
