My take on a traditional Mexican green chicken pozole/posole.
White beans, shredded chicken, green chile, sour cream and cheese. Need I say more? These have just the right amount of kick to them and hit the spot if you're craving Mexican food. They are high in fiber and so filling (one enchilada is a perfect serving size). The easiest way for me to make shredded chicken is in my crock pot. I let it cook all day while I'm at work, then I come home and shred it and freeze the broth for other recipes. Click here for the recipe. This is how I make my green chicken enchilada. The recipe is a pie format and not individual wrapped echiladas.
I created this recipe to disguise the taste of the oatmeal. You can easily add more salsa to give it more flavor also with very little calorie adjustment. My favorite fast breakfast.
This is a recipe my sister in law taught me. Native to the south Texas area. Super easy, super filling. Traditionally it you toast the pasta (like Ricearoni) after browning ground beef, then put everything in the pot. It could be from 4-8 servings, depending on how hungry you are. I used 6 because we love it!

My favorite dish at a local Mexican restaurant is their Chicken Enchiladas with Creamy Green Chile Sauce. I had to try and find a way to lower the fat and sodium so I could enjoy these without the guilt! I tweaked that recipe a bit to lower the sodium and fat, and came up with a winner! My husband and teen daughter gobble these up!

I tweaked the recipe from Martha Stewart. My husband doesn't like onions, and we both like spicy food. So, I 86'd the onions and tripled the jalepenos.
