Good winter time meal. Cut out fat and calories by using turkey or chicken smoked sausage and by using skim milk.
This is an easy lower-sodium crock pot recipe for pinto beans. I like eating a big bowl of these for lunch. But they probably would make a decent side dish. I originally made a variation of this using a packet of taco seasoning, but it was way too salty. I adjusted by incorporating Sparkpeople's no-salt taco seasoning recipe into this particular recipe. For those who desire a little salt, you can add it to suit their own taste.
I know I'll be making this a lot, and I'll probably experiment from time to time using different salsa's, etc.
I used 2 cups pinto beans for calculating the nutritional information. Wasn't any info for dried beans. I apologize for any miscalculation that might have possibly occurred.

I used my 18Qt electric turkey roaster to make this much. Freezes great. You can use thighs instead if you want more fat.
This is my conversion of a Betty Crocker chili recipe. I use more turkey than beef. I had difficulty getting the kids to eat beans, so I replaced them with mixed veggies. I now prefer this over any bean chili. I have replaced regular salt with a substitute. You can also get low sodium tomatoes to further reduce the sodium. This is a large recipe that freezes well. I make this large a batch in my 18 qt electric turkey roaster.
This easy, one pot mixture makes for a delicious dinner, after slow cooking all day.
A family favorite! Mom used to make this when I was little, and now I'm making it for my kids. Serve over rice or our favorite -- egg noodles.
