Green smoothies are a great way to get in several servings of fruits and veggies, particularly greens (which sometimes feel like a chore to eat). Baby spinach is a great green to use because of its mild taste.
All credit to Taste of Home "Test Kitchen Makeovers" I used the filling recipe from that but used a reduced fat graham cracker crust instead of the recipe's ground pecan alternative-- I don't have a food processor and the graham cracker was easier and better IMO. If you only want one pie-- half the recipe :P! Math stuff..

this is AMAZING!!! but not the healthiest. but if you use a healthy oil such as grapeseed or some kind of nut oil (walnut, pistachio etc) with the peanuts, it isn't too bad. SO portion this and it is great!

This is changed a little from the original for less fat and calories. It is apple season and just can't get enough of them! Pudding is a light "cake" in England and this is where the pudding comes from - not like the american pudding.
