I saw this on Facebook and had to try it. They were delicious! The outer crunchy part was out of this world. I added it to SparkRecipes because I couldn't find it listed here.
Tarragon enhances the sweetness of the carrots and leeks. The flavor profile is sweet and savory and oh sooo delicious!
I don't eat cheese anymore, but you can top with some parmesano reggiano if you wish!

As vegetarians, we are always trying to be creative with fun ingredients and different alternatives to the standard boring fare. We make a LOT of different veggie and bean burgers, mostly because I use it as an excuse to feed my ketchup addiction. :) But this burger takes the cake. The best part is that you can interchange ingredients as you please – substitute any type of bean or seed, and you’ll still get the same result – just a slightly different flavor!

It's VERY good! The only thing I recommend is that, if you're not too fond of sour cream, try using less!
I threw this together when I needed to use up some leftover brown rice. It was really good, and loaded with veggies and protein.
This is a deliciously rich tasting dish that I came up with because it combines two of my favorite flavors, roasted red peppers and gouda.
Quick and filling with antioxidants and monounsaturated fats. It's also delightfully purple and cheerful!
These are in no way healthy, but are a fun thing to make for/with kids for Easter.
