I learned this recipe from a friend's mother when I started baking back in 1970 (I was in the 5th grade in 1970). The coconut adds a flavor to the banana bread which can't be beat.

It may seem strange to call "bread" a vegan item... but most breads call for shortening (usually butter) and eggs. By substituting applesauce for the eggs and some non-dairy buttery spread, I removed all animal products.

This is a modification of another SparkPerson's recipe. That recipe uses only hamburger, white pasta, and canned soup. This one substitutes ground turkey, whole wheat elbows, and tomato sauce respectively, and adds corn and diced tomatoes... on the whole, I think, a bit healthier and certainly lower in sodium. Plus the V8 and vegetables add vitamins and flavor missing from the "vanilla" version.

It's a very quick dinner for when your pantry's empty and you have short notice for dinner.

Simple tuna melts, no mayo, with lemon pepper and carrots to add a bit of flavor. Great for snacks or a small lunch.

This recipe feeds a family of 5 with three teenagers who eat 2 halves apiece, leaving one half for each parent. Cut the recipe in half for two people; the melts refrigerate and re-warm really well for a couple of days.

To reheat, place in microwave on high for 1 minute (1,000 watt microwaves; reduce time for larger appliances). Or place in a toaster oven for 4 minutes at 350 F; this preserves the crispiness of the muffin half.

You can always eat the remaining yogurt with the melts or save it for later.
