A great low-fat side dish for Thanksgiving dinner! Attractive presentation, and taste delicious! The original recipe was found at www.lowfatcooking.about.com - I changed the marinade ingredients to reduce the calories a bit
I combined 2 recipes contributed by Sparkpeople members (Seasoned Red Potatoes by Ericasimps & Red Pepper & Lemon baked Chicken by QLRLMB05) to make this dish. I used red, green & yellow bell peppers. This dish has a very tangy, meditteranean flavor - wonderful! Thanks to ericasimps & QLRLMB05 for the original recipes!
My trainer gave me this recipe to eat for my mid-morning meal while I was training for a fitness competition. You can also add shredded cheese and microwave to make a great party dip for tortilla chips!
Usually if a dessert does not have chocolate in one way or another I am not attracted to it. These lemon bars are a lovely exception.

If you find the pancakes are coming out too mushy, decrease the amount of water you're using in the recipe or cook at a lower heat for longer.
These yummy scones are made with Fiber One Pancake mix. If you're up for it, you can drizzle icing over the top!
These cupcakes are lighter and more "eggy" than a regular cheesecakes. They are great with a dab of sugar free jam.
Cream Cheese should be at room temperature. I use about 1/4 cup of Davinci Sugar Free Syrup but you can use more or less depending on how sweet you want it. Try different flavors in this recipe - my favorite is Dulce de Leche!
