This is one of my favorite things to make on a cold day. It is even better the next day when flavors mix. Freezes and reheats well.
Use fresh boiled beets, not canned. Even if you are not usually a beet fan, try this. The cumin, lemon juice and tahini really give the beets a whole new flavor! And using lots of beets reduces the calories and fat over traditional hummus.
A great not too spicy chili! I love it topped with a little Fritos, cheese and a small dollop of sour cream. These ingredients are not added to the nutritional information.
A great salad all on its own, but would also be great as a filling for a wrap sandwich.
A hot bowl of onion soup is wonderful on a cold winter day! The cheese is just for a garnish, so any other low cal chese can be used. Also, vegetarians can substitute a veggie stock for the beef stock.
