This recipe is especially easy to put together. Love for Mexican food inspired this recipe adapted by Bill Turner. It is great for a main meal served over lettuce or use as a dip with cut vegetables or chips.
The tuna melt is my go-to greasy diner food. When I tried to create it at home, I found out you really don't need all that mayo (or any!) and it will still be delicious. This is an easy, tasty, cheap one person recipe (though it would easily and quickly double or triple or whatever) that really feels like cheating. I used full fat cheese, so you can make it even healthier if you want to go low fat.
You can substitute nonfat yogurt for the sour cream and bananas for the blueberries. Delicious and healthy!

Calorie counts do not include the coconut oil, because coconut oil is metabolized differently in the body than regular oil. As long as I use only 1 tablespoon in this recipe I don't count it for the calories for the 5:2 Diet fast day
