This lightened version doesn't use any butter but you don't even miss it. I add extra garlic just because I love the flavor. This recipe originally called for 1/2 tbs of salt but I omit the salt completely and add other spices or I saute a dash of crushed red pepper. Sometimes I add broccoli or asparagus to get a vegetable in.

This is an old recipe from my mama. She fried them in crisco, I use canola oil and drain them well. I also serve them with a light caesar dressing.
