This is a family recipe that my grandmother brought over with her from Sweden. All my children and grandkids love it, it is the "expected" breakfast when they spend the night at Nana's house. I have replaced the 3 eggs with egg beaters. Serve with syrup (not included in the calorie calculations. My husband and I use sugar free syrup. They are more like crepes and are also delicious with fresh berries and diet whipped topping.
Make your own sausage for a healthier alternative to prepared, store bought sausage! I cut out most of the salt called for in this recipe for a low-sodium alternative. If you don't have an hour to let the spices meld, that's ok. Let them meld for as long as possible before cooking. They're tasty either way. Enjoy!

This is one of my family's favorite recipes. It's high in sodium though! Hopefully I can get my hands on some low sodium enchilada sauce soon and re-do this.
