I start with Lehi Roller Mill Whole Grain Heart Healthy Hotcake mix as a base for this recipe. You can use any pancake mix you like. I use Lehi because it is a very wholesome food containing whole wheat flour, whole flaxseed meal, nonfat dry milk, eggwhites, and dry buttermilk. I add old fashioned oats and cold milled flaxseed in this recipe, so even if you use a basic pancake mix, you will end up with a nice whole grain waffle.
