These muffins are huge and delicious! They are 100% whole-wheat and have almost no fat in them. They only have 5 grams of sugar per muffin! Also, there is a good amount of protein and fiber in each muffin!
The recipe starts with a pound of raw pepitas (green pumpkin seeds without the hulls). Since the only other caloric ingredient is a little honey, you basically end up with flavored pepitas calories. This recipe can also be used with regular pumpkin seeds, but my husband prefers the seeds without the hulls.

This natural jam is so tasty you will love it. Use it on toast, mix in yogurt, top ice cream or pound cake. This freezes well also. I put in small canning jars (4 oz) and thaw when I run out. Small jars work well so that you use it fairly quickly although it keeps in the fridge for a long time. I haven't tried it yet but bet that agave nectar could be successfully substituted for the sugar for a lower glycemic effect although the sugar is so minimal that I doubt there is an effect.
This is very quick and easy to make and nice to have for guests who "drop in" for coffee.
