The use of coconut oil makes them super healthy. Don't be fooled by the amount of fat, as long as you are within your limits for the day, a little coconut oil is very good for you!

This is a higher calorie 'salad' because we generally serve it as a main dish with sliced fresh tomatoes for a cool meal on a hot summer day. It is also great made with Fat-Free Italian dressing ( and lower calories) but the men in the family prefer the mayonaise based version!
