This salad is a great change from the normal coleslaw of old! It won't get soggy or lose it's crispness the next day either.
I was hoping to make something similar to my favorite parmesan peppercorn dressing, and honestly, I think this is so much better! No HFCS, no added processing, or crazy chemicals. Super easy!
My mom makes this using whatever leftover veggies she has in her fridge, so it's always different! I like peas, tomatoes, carrots, mushrooms, broccoli...the possibilities are endless!
