modified from Moosewood's BBQ tempeh recipe. (i just like tofu more, and it is more widely available.) i changed tempeh to tofu, the sauce, the spices, and the cooking time on the onions.

This is a wonderful shilled chicken salad. It is perfect for a light lunch, with some fresh fruit. I usually use a crusty wheat bread for the sandwiches! Yummy!
I find this tuna salad to be better and WAY more interesting than tuna with mayo. Since I cook for one, I make this in a tupperware large enough to mix it, but small enough not to take up a ridiculous amount of space (for instance, a wide, 1 quart round tupperware). Saves me time on immediate cleaning, and storing! The additions of the mustard, vinegar and pickle juice keep it moist, so unless you absolutely LOVE mayo, you won't even miss it!
When apples are in season, I like to omit the carrots, and replace them with some minced Granny Smith Apples. In this version, I add extra apple cider vinegar. Sometimes I'll add minced pears too! I actually find the apple version to be even better than this one. Enjoy!

This spread is great on a toasted bun topped with cooked chicken. But I think it would great with anything. It is high in mono-unsaturated fatty acids which is great. So healthy and good for you.
