I found this recipe in a Biggest Loser magazine, and I'm always looking to adapt our favorite recipes. I tried this and my family absolutely loved it! So creamy and flavorful!
My tomatoes were a little too ripe for a traditional salsa so I roasted them in the oven and my family fell in love!
Something else I just threw together and not too bad either!
This recipe is for 1/2 a squash per person
Just a simple recipe for broiled tomatoes. Can be used for breakfast or any time, any meal.
You can uses any spices/herbs you desire. You can 1/2 this recipe or add more oil, ghee. This is roasted in a cast iron pan in the oven.

The balsamic Vinegar gives a great taste to this recipe.
The number of servings depends on how large your Eggplant is, how thick/thin you slice it.
Use COMMON SENSE on the serving size.

This is quick and easy. This version is low calorie and high fiber. You can substitute any vegetables for the broccoli. I've used carrots, spinach, celery, etc.

Of course, you can add any veggies available, but this has a nice mellow flavor that' great with fish, chicken, or any meat, or can stand alone. Reheats well and tastes good cold.
