Roasted Kohlrabi, Broccoli Stalks, and Butternut Squash
I came up with this recipe as a way to use up some kohlrabi, broccoli stalks, and cubed butternut squash. What better than to roast them! Kohlrabi is part of the cruciferous family. Raw, it tastes much like cabbage, and, like all cruciferous veggies, it becomes sweeter when roasted.
