Also great with boiled or roasted chicken breast, this soup is a little different, all the broth is tomato or vegetable juice! I use canned mixed vegetables for convenience, but fresh veggies are terrific in this, too.

I threw this recipe together one day when craving some Mexican-American inspired food and going through my pantry. It's very easy, and great if you are a college student on a budget, like me. I t think it would be great with some fresh onions, cilantro and black olives, topped with a little sour cream or plain Greek yogurt.
Put diced apples in bottom of crock pot set to low. Cover with Splenda brown sugar and cinnamon, then cover with steel cut oats and finally water. Do not stir yet. Cook in the crock pot for 1-2 hours until desired consistency is reached. Stir only once apple/brown sugar/cinnamon mixture starts to bubble to the top of the pot.
Delicious pintos that can easily be served as is or mashed to make refried beans (frijoles refritos).
