These were a favorite of my moms. I just lightened them up. They are good warm or cold for a light lunch or snack.
I start this in the evening, and it is ready to eat in the morning -- or start it in the morning and it is ready when I get home from work. The incubation time take a while, but it is easy make while I am prepping for dinner, doing dishes etc.

This a a nice tasty muffin, I halfed the oil (from 1 cup) and found they still turned out great. As you might have noticed it is sugar free. I have used this same base recipe and put mashed banana and pumpkin in (caloric values would change then of course)
Can be a little dry so add a little water to make moist, water also keeps down the calories.
You can shape these snacks into balls or bars. Delicious snack perfect to fuel your workout.
Yummy muffins with chopped apple, oats and Greek yogurt. Feel free to substitute other fruits instead of apples (it will change the nutritional values).
Blend all ingredients except parsley in food processor until smooth and creamy. Mix in parsley by hand.
