At only 66 calories and virtually fat-free, one of these muffins provides almost 10% of the minimum RDI of dietary fiber. Not to mention they are a delicious snack or part of a sound breakfast! (I often slather one with a tbsp of fat-free I Can't Believe it's not Butter, grab a half-cup of light soymilk, and cut a medium banana in half for a tasty and satisfying 150 calorie breakfast-on-the-go).

Delicious waffles that pack a huge nutritional punch with blueberries and whole wheat!
Let it melt a little and you have a strawberry milkshake. Freeze it for a few minutes and you have strawberry ice cream. Eat it straight from the blender and you have a thick, creamy smoothie.
I use homemade yogurt, but if you don't make your own any fat free (or lowfat) yogurt will work. Try to get the ones with active live cultures for the extra bonus of good bacteria to help digestion. :o)
Combine all ingredients in blender. Blend for 1 minute or until smooth.
These muffins are always a nice beginning of summer treat, with the light familiar taste of rhubarb.
I know it sounds crazy but, they do taste good! My daughter won't eat veggies so I made these and she loves them (she's 15 months old). I had to use part white flour and part whole wheat because her digestive system couldn't handle that much whole wheat, but feel free to use all whole wheat flour. You can use diced apple instead of blueberries and add 1 ½ tsp of cinnamon to the dry ingredients.
Taste great and are nice and moist (don't over bake!)
