I use an 8 and 6 count muffin pans. This can be done in a 12 and 6 count but are a bit smaller muffin.
Makes a nice cake like bread, kind of a non descript taste which is good, you can add nuts, raisins, ect to differ it. Reminds me of bran muffins.

This is a quick & wonderful recipe given to me by a great friend. The batter makes 6 dozen small muffins & keeps well up to 6 weeks in the fridge -- so you can bake a few or many, as you like. The muffins are actually better after the batter has aged a week or so.

For variety, I add one very ripe mashed banana to one dozen muffins -- yummy banana muffins!
Great snack for before, during or after workout, or as a grab and go treat.

To cut the calories instead of using regular size cupcake pans - use the mini's- which you can get - 45 mini's - which of course would be 1/3 a serving each.
