My first attempt at vegetarian chili. I would leave out the tomato paste and reduce the water next time.
I was looking for a chili recipe and found one that looked good. I didn't have all the ingredients so I did some substitutions and end up with an amazing chili that my family loves.
Recipe is about 100+ years old. Was handed down from Grandmother to Granddaughter.

In a little oil brown pork. Add chicken broth, onion, chopped tomatoes & drained canned beans. Bring to boil; simmer 15 mins. Add spinach & cook 2 mins.
I love chicken tortilla soup from a Mexican restaurant, Pappasitos, in Houston, TX. They will tell you any calories! I know the soup can be high in calories, so I made a low cal version by taking out cheese and tortillas. I have included how to add tortilla and cheese (this is a little thicker soup, the low calorie will be thin like chicken noodle soup). My favorite topper is cilantro and 1/4 of a lime with each cup! I think the lime juice really makes it!

First, you’ll want to brown one pound of ground beef, or ground turkey if you prefer. You can cook the meat in a separate skillet or the large pot you will need for the soup. Once the meat is brown, drain it and add in two minced garlic cloves and half a cup of onions. Stir those in and then add in your spices–one tablespoon of cumin and one teaspoon of chili powder. Let the spices soak in while you dice up an eight ounce block of cream cheese. Add in the cream cheese and use the back of a wooden spoon to mash it into the meat. You can use a metal or plastic spoon, but the cream cheese will not stick to the wooden spoon as much.
