After years of making many different soups, this is one I came up with that my family simply loves. You can add meatballs, blackened kielbasa or whatever meat you want or add no meat to it at all. If you are a vegetarian, use vegetable stock in place of chicken broth. It is creamy and very filling on a cold winter day!
I hope you enjoy this very unusual take on potato soup!
Brown turkey with onion. Mix all vegetables, taco seasoning, and ranch mix in large stew pot. Add turkey and onion once browned. Simmer on low heat until hot. Serve with sour cream and corn chips.
My kids love this soup. We serve it with shredded cheese, sour cream, fresh cilantro, and tortilla chips.
Great soup with a touch of heat. Be sure to only use Qty 1 Chipotle chili out of the can and not the entire can
This is a great paleo/primal version of a winter classic in addition to being totally SANE (See the Smarter Science of Slim). Seriously, it tastes like split pea soup but has no peas at all. You get a ton of veggies with cauliflower to thicken it and green beans to make it green and add the pea flavor, and then the ham bone brings in all the marrow and boney goodness - feel free to use one or two bones, whatever you have. Each serving has only 10 net carbs and they are all from veggies.

Big 2 cup servings at only 165 calories! Make it fast and easy by using frozen vegetables and cooked chicken. You can control the heat by the amount of cayenne pepper and jalapeno by adjusting it to your own tastes. This makes a BIG pot of soup, so you may want to consider cutting the recipe in half.
Vegetarian lentil soup is low in fat, but high in fiber, protein and flavor! This vegetarian and vegan lentil soup recipe calls for lots of healthy vegetables, including spinach, so it really is a balanced vegetarian meal in itself. (From About.com)
Prep and cook time is about 10-15 minutes. Makes enough for 4 bowls and one fantastic leftover lunch.
