A little high in sodium for some...but my first attempt at adapting a vegetarian recipe
I'm a health fanatic so making healthy low-cal recipes that have large servings is what I aim for. Family loved this. Also, I used Organic Blue Agave nectar instead of honey for the low glycemic-index. Either will work.
this is easily put together with the ends of various seafood packages and some leftover rice
Inspired by a Spanish fritatta recipe I came up with this gem to "spice up" the rice and ham I was going to have for dinner
