A great tasting, low fat meal that can easily be turned into a side by subtracting the chicken!
We love soup at our house in the winter so I try to come up with new ones. This one tastes like spanish rice with out the rice but you could add rice to the soup for a heartier soup too. Great spicy flavor!
This is the cuban recipe with a twist. I added celery and a plantain for sweetness. The original recipe is only with carrot, potato and 2 oz angel pasta ( I use 1 oz) to reduce carbs. Saffron is optional. Sometimes I add more veggies like spinach, broccoli or kale etc and calculate them separately but they don't add too much calories.
original recipe allowed for larger servings, we upped the garlic and red pepepr flakes and reduced serving size

Low carb although you could use some bread instead of couliflower at the botton on the baking pan.
1 serving = 2 piquillo peppers or half a green pepper.
You could add some low sodium soy sauce.

I just have the burgers with some salad in order to avoid the sugar and carbs you get from the buns.
