My favorite vegetarian/vegan bbq recipe using whatever sauces I had remnants of in my refrigerator!
A one dish dinner, that you can prepare in 30 minutes start to finish if you are fast at chopping. Avocado and cilantro provide the inspiration. You can substitute other veggies as desired. In the "most nutrients for the fewest calories" challenge this is a winner.
1 serving is 1 cup. Yummy and simple, in preparation and in flavor.
I threw this together adlibing seasoning with the basic tahini to garbanzo ratio from the joy of cooking. This is so easy. And so cheap, for $1 i can buy 6 pita loafs and 78Cents I can get a can of garbanzo beans. It's a great pick me up before or after an aerobic workout. It also makes for a great snack, or even a very low calorie lunch or dinner. Once you try homemade hummus you will NEVER shell out $3 for prepackaged again.
Found this recipe on the internet and had to size it down from industrial to household amounts

The author said, "This is a recipe that I've tweaked to perfection and everyone asks me to bring to any pot-luck or party. If you can find a market that sells berere (a spice blend) it will taste more authentic. You can find recipes for the spice blend online or see the recipe for substitutes if you are in a hurry. This is usually served with injera, a flat pancake-like bread. If you can't find that you could serve this with rice or pita bread. "
You can also add dark chocolate chips, walnuts, raisins, or pretty much anything you'd like for an added twist!
Cookies are under 60 calories each without, though!
Low in fat and high in protein and fiber, this spin on classic mujadara is a great side dish. Throw it in a tupperware cold and it makes an equally delish (and filling) brown bag lunch! I love mujadara (a Middle Eastern dish of lentils, rice and carmelized onions), but I often overcook my rice leaving the dish a mushy mess. So I substituted one of my favorites - nutty, chewy barley - and discovered that I (and my picky toddler) prefer the newfound texture over that of the gritty/mushy aforementioned dish. This has become one of my staple vegetarian go-to meals and you'll always find a tupperware full of it in my fridge =)
My mom's famous vegan eggplant parmesean. Simple and delicious! Non-vegans will just assume you're using a very low-fat mozzarella. Add chilis to your tomato sauce if you like some spice. You can also use canned tomato sauce and pre-packaged breadcrumbs if you are short on time. Just make sure to take the differences in the nutritional information into account!
This vegan/raw foods main-dish starts with processing raw cauliflower into a rice-like texture. It has a clean, fresh flavor!
Bite-sized chocolate chip cookies made with ground almonds, oats, and coconut oil! Plus vegan chocolate chips (my new favorite thing!) They're so good! You can't eat just one! And you can have more than one when they're only 58 calories each!!
I said I would make calculations for rice using vegetable broth, and here they finally are!
This recipe is from Emilie Eats online. The only alterations I have made are by using low sodium products, kosher salt, and canned tomato instead of fresh.

I got this recipe from "Oh She Glows". This is a vegan, gluten free treat and very healthy for you. Eat by it'self or serve crumble it on oatmeal, yogurt or have it with ice cream.
This is a quick, easy and delicious way to use leftover rice. Feel free to use other veggies/nuts/beans to make this your own unique creation.
Needed a change with lunch, this will give you energy and help with your muscles with all the potassium. This is great bar to take on hikes. These bars are soft and normal recipe calls for 12, but I got 24 of them by cutting the bars to normal brownie size bar. Top these bad boys with peanut butter and you got heaven!! I got this recipe from Family Fresh Cooking.
After years of being told how yucky okra is and avoiding it, I tried it and discovered that I actually love it! This quick stew combines okra, corn and tomatoes with warm Indian spices. If you've been afraid of okra too, or even if you're an okra lover, try this recipe and see how you like it!!
