Vegetarian brunch item, adapted from a Rachel Ray recipe. A nice side item for pancakes or eggs on the weekend.
Pumpkin is a common pasta filling in Italy. Here, we've made a sauce from the fall favorite.
This is an accidental adaptation for the no-butter sugar cookie recipe found on the blog: A Foodie Loves Company. I say accidental because her recipe calls for 2/3 cup canola oil however I substituted vegetable oil and accidentally used 3/4 cups instead of 2/3 cups. They still turned out quite nicely.
Combine all ingredients in blender. Blend for 1 minute or until smooth.
Scalloped potatoes with that beautifully "nutty" Gruyere cheese flavor. The onions can be considered optional, but really blend well with the other flavors. This is an updated recipe from a cooking magazine that I read in 1998.

So simple this can hardly be considered a recipe - it's inspired by my trip to Niagara Falls where Andrew (my fiance) bought a bag of them from Sugar Mountain and loved them.
Veggie bacon draped over tomatoes with cottage cheese and garnished with fresh basil :)
We used Portuguese buns, not wholewheat but are really fresh and use very few and only natural ingredients, plus are quite low in sodium. If you use a different bun you may want to re-calculate the recipe. We also used Eden Organic No-Salt added beans. They are fantastic.

Very healthy and delicious vegetable lasagna, full of fiber and nutrients! Easy to customize; just add your favorite fresh produce to the mix.
Eggplant and salt cod is one of my favoirite meals that I load up with lots of onions, bell peppers and tomatoes. If I don't have tomatoes, I'll do with out.
I usually serve with either, plain polenta (harina de maiz or funche), boiled Carribean root vegetables, like green bananas, taro root, mountain yam, pumpkin (calabaza), breadfruit, malanga and, tanier to name a few.

*I use Kraft's Fat Free Shredded Mozzarella and Cheddar cheeses because they are the only fat free shredded cheeses at my grocery store.

This sauce is delicious, and it could easily be made vegan by swapping out agave for the honey. Quick and RIDICULOUSLY easy!
