We browned this sausage and then sauted some onions/bell peppers to go onto of this vegan dog....delicious! Experiment with your seasonings and come up with new varieties! We are making a mexican dog next time with cumin, jalapenos, cilantro, etc. We make a triple batch each time and freeze, then thaw out and use as needed.
Of course, you will probably make more than one. I like this recipe because if you want one, you can make one and pop it into the toaster oven. If you want to make a batch, then just multiply the recipe.

Years ago, I learned that I could make scrambled eggs using water instead of milk. I have learned that if I season the eggs with onion and garlic powder and salt and pepper, they take really good.
You can also use water with seasoning or broth to saute vegetables.

This recipe is adapted from the one found at Runner's World website. It is a great vegetarian recipe for anyone running or otherwise.
Can add up to 1 c. assorted sauteed vegetables such as broccoli, onion, mushroom, and fresh or dried herbs such as sage, parsley, thyme - whatever you like.
Bake 350 degrees for 30-40 minutes until filling is set.
