Looks good. I think I can play around with the amount of chicken to make this higher protein and less carbs. Thinking three chicken breasts and then only 4 tortillas to make 4 servings. That should get the nutritnal values better for a dinner. Will rate once I try it.
I just happen to make enchiladas last night. I don't use the cream soup which cuts out some calories right away. I also add some black beans to the chicken which makes it healthier. I also sprinkle some chopped scallions on top for color and flavor but that's me. We love them!
Excellent recipe; tasty. The only reason I gave this 4 instead of 5 stars is because it can be made healthier with better ingredients. I used fat-free cheddar, and La Tortilla Factory tortillas (50 cals ea.); with those substitutions: calories = 198.9, total fat = 4.8g, and total carbs = 21.2.
Sounds good, but lots of salt due to cheese.
I thought this sounded simply wonderful...but...I considering a dinner porton (2) of these would be over 100 mg of cholest. and 1,000 mg of sodium, it just seems excessively unhealthy !
This sounds great. I would suggest the fat free shredded cheedar to lower calories and fat. Also can get low carb wheat tortillas too. Every little bit helps, atleast in the guilt department
