This penne pasta salad is a healthier take on a classic cookout side dish.
This uses tradition olive oil and red wine vinegar dressing, but fat free Italian or Greek can be used instead to cut down on fat and calories.
I have also made this without the pasta for low carb. My kids eat it better with the pasta, but I made it for a party where many people have low carb diets and they all liked it without the pasta. Either way one of my favorites.

This is a pasta version of my favorite salad, Greek Salad. Add sliced cucumber as a side dish for the full effect! Whole wheat pasta gives it a great fiber boost.
