As a type two diabetic it's hard to find a filling sandwich that doesn't send my blood glucose level through the roof. I made this on a whim one evening and it really hit the spot. If you aren't watching your carbs you could add a handful of cranberries or some sliced grapes and walnuts to make this even tastier! This makes a great meal for the whole family or for a picnic or brunch meal.
This is a great healthy start to a great kebab I often add corn, tomatoes, avacado, zuchini, or other veggies, or chicken. Adding any of these will change the nutritional content, but it's still a really healthy fulfilling meal starter.
OK its totally not as bad as it sounds. its your basic bean burger, but with tuna for extra protein. you can easily leave it out. I basically made it and hoped for the best. let me know what you think, and what you did to alter yours :-)
