I bet you could use pumpkin instead of the applesauce, if desired. I am thinking about adapting it to use as a topping for apple crisp.

This is a delicious recipe based on Alton Brown's. But with no oil and low sugar syrup the calorie count is much better. But a half a cup is the serving. Best used on yogurt or as a snack.
This is a super easy and delicious, low fat snack or breakfast. My children love it and I love it not only for the taste, but the zuchinni packs nutrients in and my kids don't even know it's in there! I substituted the oil for unsweetened applesauce and talk about moist??? Whew...these suckers are GOOD!!!

A delicious way to start the day.Great if your a busy person and never seem to have time to eat in the morning. You can add wheat germ if you like. I use half unsalted butter, half lowfat margarine because I think it gives a better finish but you can just use all margarine.
