It’s an interesting quick bread since there’s both whole wheat flour and cornmeal in there, making it all deep and earthy tasting. Your wet ingredients are just buttermilk and molasses. Lots of thick, gooey molasses. There’s no other sugar in it so it turns out somewhere in between savoury and sweet. It’s not going to taste how you expect so wrap your head around that fact now.

I created this recipe to disguise the taste of the oatmeal. You can easily add more salsa to give it more flavor also with very little calorie adjustment. My favorite fast breakfast.
A low fat calcium rich fruit pancake. I made a few alterations on a spark people recipe. A Great recipe for making a bunch and freezing as a quick grab and go. I just throw them in the toaster at work cover with some peanut butter and voila! a quick and nutritional breakfast.

Thinly sliced apples dipped in pancake batter and pan fried, serve like pancakes with a kick. Any pancake batter will do the trick, this one uses coconut flour.
Mildly tart apple + nutty cinnamon + sweet pancake batter = delightful breakfast and a fun presentation.
I always used to hate eggs but now since I have made them this way I can eat them.
