Delicious and healthy banana bread style muffin. No butter, no flour and very little sugar or oil. Instead of flour this recipe uses old fashioned oats ground into oat flour.
This is a simple breakfast porridge using oat bran, sugar can be added to taste (a small small drizzle of maple syrup works well) it takes about 3-5 minutes to make and is very filling.
note: I use 2% milk, you can use leaner milk for less fat content but be careful not to let it boil so it doesn't curdle. You can also substitute water for the milk without issue - I chose milk because I like it and it will keep me full.
This recipe was my kids fave Sunday morning tradition. Very impressive to serve at a brunch as it puffs right up. Serve coming right out of the oven with greek yogurt and maple syrup, this is a delicious high protein Sunday morning treat.
