Another impressive way to serve ratatouille.
Pretty much, it took it from my recipezaar thingy.
Perfectly light, fluffy and yummy. Really good with mesclun and perhaps french bread. You can change the spinach for whatever cooked veggie you want, or raw cherry tomatoes.
I was a vegetarian. Beef Tartare was what brought me to the dark side. Now I am back as a vegetarian. And this really satisfy my cravings. Awesome with sourdough croutons. You can add an eggyolk, will taste much more like a beef tartare...
This is Fanny Farmer's version. Olive oil is substituted for shortening. Serve with boiled or mashed sweet potatoes and brussels sprouts.

A delicious quiche with broccoli, bell peppers, and caramelised onions! You can substitute any of the veggies, and even skip the crust to make a yummy breakfast frittata. (Only 144 calories and 7g carbs per serving as a frittata.)
This quiche freezes nicely, so you can serve one and freeze the other. Excellent for lunch or as a first course or side dish for dinner.
This is a very flavorful way to serve beans. For even less calories you can use only the chicken and leave out the bacon and sausage, or use lowfat turkey sausage. Is also wonderful with andouille sausage. Serve with a crusty french bread.

This is my mom's version of Julia Child's Fillet Of Sole Bonne Femme, courtesy of Julia Child! Sole poached in wine with Swiss cheese, heavy cream, mushrooms and not much else! I definitely suggest an enameled cast iron Dutch oven for this, as it evenly distributes the heat.
