I was tired of trying to find a vegan lentil loaf recipe I really liked that would appeal to my three-under-three. So I made one. You can use onion instead of shallot and up the spices and such, but I keep it on the underseasoned side for the kids.
A great way to add vegetables to your day without tasting them! My 19 month old loved this!

1.Place 1 tsp. Smart Balance on skillet, Heat at med.low.
2. Place 1 tortilla on pan
3. place 1 tbsp. of Marina sauce on tortilla
4. add cheese to cover one-half of tortilla
5. Fold tortilla in half, making sure to keep sauce and cheese inside
(If you want meat on it, add 5 slices of turkey pepperoni, chooped, and add to recipe calculator)
These can be dried in the food dehydrator. Fills 2 sheets (spray with Pam) and cut with kitchen shears into 8 sections each for a total of 16 rollups

found this recipe on All recipes and thought it was interesting it was made with cool whip. I used fully loaded ingredients for first time making it, next time I'll use the lower fat content to see if can make it lower in calories
