This is an exquisite Persian food that can be made with poultry or beef. I like to use it to use up my leftover holiday turkey, The prep is fairly simple, but it takes a long time to cook and can scorch so I recommend doing it in a slow cooker. If the sauce gets to thick before it gets to a dark rich brown color, add more water. It should be the consistency of a thick gravey. The meat can be cooked in the sauce, but start it earlier in the process. Raw beef cubes (1.5 x 1.5 Inches) or chicken pieces should be browned and should cook for several hours, to be very tender. Add the sweetener a bit at a time and add more or less to taste. The pomegranate molasses is quite tart and more or less can be used to taste. Adjust the sugar and pomegranate before adding any partially cooked meat or poultry. Serve over rice (not included in nutritional information).
