I also sometimes substitute spinach for the romaine.
This is a thick hearty soup with just the right amount of spice. This recipe will be lower sodium if you rinse the beans before adding them to the soup.
I concocted this when I didn't have the right bread to follow the original recipe. This is my own recipe, the only thing I was able to take from the book was tomato and avocado. The rest I threw together. When my boyfriend that does not like tomato and avocado together, said it was his favorite vegetarian meal as of yet and wanted seconds, I though I'd share it. The nutritional info varies, so didn't list. The fat mainly comes from Mayo, cheese and avocado. The avocado is good fats though. If you change it any, feel free to add your own changes and share with us.
While a bit on high on prep time this is one of my favorite lunches because it sustains me throughout the afternoon. You can substitute any cooking oil for the peanut oil if you are not using a wok and lower the calorie content by 50 calories or so.
I just made this up because I was out of sour cream and I always need a sauce!!! So I thought of tarter sauce - mexican style usingthe light mayo I had in the fridge...it worked pretty good!
