This is an easy and yummy cold summery salad. I took it to a friend's house for a side dish and it got rave reviews.
This used to be a Mr. Food recipe, but it no longer exists on the site. Fortunately, my friend's mom had the recipe. :)
This is an easier version than the traditional "sponge" method, and oh so good!!
You will be surprised how much you come to like the unusual combination of sweet watermelon, hot jalapenos, and lime. A perfect accompaniment to grilled chicken, fish, or seafood. Or just enjoy it by itself as a refreshing and low-cal treat. Yields estimated 7- 1/2 Cup servings.

Extremely healthful, 100% whole grain bread with a great rise and texture. Use soy milk and soy milk powder if you do not drink milk, and agave nectar for the honey if you are vegan. Sometimes I add sesame or hemp seeds to the top of the loaf or dust it with flour for a decorative flare. For a sweeter bread, up the honey content to 1/3 cup and drop the water content to 1/2 cup.
I love a good coleslaw, especially in the summer. I haven't found one the rest of my family really enjoys. That is until this one. Everyone loved it and even wanted seconds. I didn't even get any leftovers the next day!

Adapted from Reinhart's The Bread Baker's Apprentice to use my whole wheat sourdough starter, this loaf makes a delicious vehicle for sandwiches of all types and due to it's slight sweetness from honey it makes excellent toast. Will make one 9x5" loaf or about 10 individual buns.
