This egg salad tastes a little like deviled eggs to me, and is a great filler for a pita, or equally delish on crackers!
This is a snack cake that is easy to make and great for company or picnics as the name implies. (It packs very well).
Sweet orange juice concentrated and tangy lime juice create a richly flavored dressing base with zero fat. Roasted pumpkin seeds, also known as pepitas, can be found in Mexican dry-goods displays in most supermarkets.
These are made using the "master mix" which I have also shared.
Enjoy these not too sweet muffins, add some cornmeal for corn muffins(with a little extra water) or anything you want really just make sure you do the calorie counting. I have done it for carrots but not the cheese (optional) 136 calories per muffin with 5 grams of fat, not too bad for a delicious muffin!
My family loves this recipe! When I called my mom for the recipe, she laughed and said there really wasn't any recipe to it. It's so hard to believe it is is really this simple yet SOOOO good!!

You can change the beans to your preference in this as well as adding chopped onions, green/red peppers, chili peppers or garlic.

Mix peanut butter, sugars, butter, shortening, egg together. Add flour. 3/4 tsp soda, 1/2 tsp baking powder. Bake at 375 for 10 minutes
This lighter version of the traditional salad contains 11 grams of protein and 9.8 grams of fiber per serving.
