A nice refreshing summer salad with strawberries, onion, and poppy seed dressing
Easy, refreshing side; delicious on a summer day and a nice change from cucumber pickles.
4 chicken thighs, baked with skins on, remove skins and shred into a bowl, add diced celery, onion and grapes, stire in mayo and lemon, s&p to taste
THISS SALAD IS WHAT I TAKE TO WORK FOR LUNCH. IT IS FILLING AND HOLDS ME OVER TILL I GET OFF WORK.
Found this a couple of years ago, don't even remember if I've changed it, but it's so good it could become addictive. In place of turnips you can use celery root OR jicama, which is slightly less in net carbs and a bit sweeter.
This is a mixture of quinoa and chopped vegetables with lemon juice as a dressing. I eat this as a healthy filling lunch or snack.
I add black or kidney beans for added fiber, but they are not figured in the calories, so I add them after I measure my portion and calculate them seperately.
