Zucchini has become a staple replacement to pasta for me. This recipe is JUST for the "ravioli" But I will post the sauce separate.
This is a lighter-cal version of shepherd's pie that is really super easy to throw together for a healthy family meal.
Can be served as appetizer or as a entrée with veggie and dip or soup side dish
Just a little twist on a traditional dish. Using sesame oil instead of vegetable or canola and brown rice instead of jasmine long grain.
How I learned to make it from friends of family! Yes, the fats are alarming and probably from the chicken and cannot be helped. You can probably make a healthier version of this with shrimp.
Note: I omitted the usual Fish Sauce because it is not listed and it is so salty that I usually try to omit it or use very little. However, if you aren't watching your sodium as closely as I am go right ahead! It really does add an authentic thai flavor.

Second note: BASIL IS FRESH BASIL. Not herbal.

Preheat the oven to 450*f

This recipe came out of a magazine. My mom made it for me on my birthday and it blows shake 'n' bake away!! So yummy!
This is actually my mother's recipe, so of course it is tangy, tasty, nutritious, and easy to prepare. You may need to adjust the amount of ingredients slightly, depending on how many family members you are preparing for and your own personal preferences. This meal serves 4 people.
This is a good, old fashioned dinner. All you need is some French bread and a salad to go with it. It also makes really good left overs. Enjoy!
