I like to use whole wheat flour in my recipes and this one also has oatmeal, zuccini, yellow squash, walnuts, applesauce and reduced sugar. It tasted great, too. Makes 27 reg muffins or 54 minis.

Both vegan and a raw food recipe, this zuccini hummus was a big hit with my kids at home! A great vegetable based snack, use raw veggees to dip (I like celery) or pile on a romaine or endive leaves and top with veggees for a healthy lunch.

If you are doing to dehydrate it, the recipe calls for 6 heads. Adjust your spices accordingly.
